Sneak Peek – Fall in Love with Pumpkin!

Fall is the perfect time to cozy up to flavourful, seasonable recipes that warm from within.

With Halloween fast approaching and pumpkins outside waiting to be carved, I’ve been determined to make the most of these beauties both on my front porch, and family table! Luckily, my friends at Global Edmonton are also primed for pumpkin season.  Next Sunday, October 26th, we’re planning a 3-part pumpkin recipe feature on the morning show! I can’t wait. So, get ready to cozy up for recipes that nourish, delight, and bring the whole family together!

Here’s a sneak peek of what recipes have made the cut so far!

Roasted Pumpkin Seeds – The Perfect Snack

Pumpkin seeds are the unsung heroes of fall. These crunchy little gems are not only fun to make but are also packed with nutrients, like zinc and magnesium. They make a great after-school snack, a pre-game fuel, or even a crunchy salad topper! Pumpkin seeds are rich in healthy fats and plant-based protein. They’re great for athletes needing a boost of energy or anyone looking for a healthy, satisfying snack. For the show, I’m still deciding between a savoury or sweet blend of seasonings. Please help me decide! When it comes to snacks, are you on team savoury or team sweet?

Pumpkin Patch Mac & Cheese – Cozy Comfort Food

What’s better than mac and cheese? Pumpkin Mac & Cheese! This savoury twist adds a creamy texture and subtle sweetness that the whole family will love. It’s a fantastic way to add in extra veggies while giving this classic dish a fall makeover. Adding pumpkin to your favourite comfort foods boosts the dish with fibre and beta-carotene, which supports healthy vision and a strong immune system—perfect for the cold season. What family recipe do you like to boost with seasonal fruits or veggies?

Harvest-Time Pumpkin Oat Muffins – Easy & Delicious

Harvest-time muffins are packed with wholesome ingredients like applesauce, oats, and maple syrup. They’re ideal for breakfast or snacks and make the perfect companion for busy mornings. You can even layer them in mason jars with vanilla Greek yogurt for a grab-and-go breakfast. What’s your family’s favourite muffin recipe?

Final recipes and behind the scenes fun to be posted here and @GetJoyfull Instagram on Sunday, Oct 26th following the show.

Stay tuned! Thanks for being here, friends. Happy fall, everyone!

Joyfully,

Emily
