Strawberry “Shortcake” Pops

This week’s GetJoyfull Snack Plan features a delicious, make ahead treat that’s truly summer on a stick!

My kiddos love creamy, fruity smoothies, and when the weather warms up we like to transform our favourite smoothies into fun frozen pops. I grew up watching Strawberry Shortcake on television and eating strawberry shortcake every single summer. It’s a quintessential childhood treat in my books.

Nowadays, to save time, but keep the nostalgic flavour and feel, I make Strawberry “Shortcake” Pops for my me and my kiddos. They’re sweet, refreshing and comfortingly good. Oh, and just the right size to eat if you ever get to sneak away for 5 minutes of “me time.”

Here’s the recipe!

Strawberry “Shortcake” Pops

Makes: 12 pops

Ingredients: 

Strawberry Smoothie 

  • 2 cups (500 ml) frozen strawberries
  • 1 frozen ripe banana
  • 1 cup (250 ml) Greek yogurt
  • 1 tsp (5 ml) vanilla extract
  • 1 Tbsp (15 ml) honey*
  • 1 Tbsp (15 ml) chia seeds
  • ½ cup (125 ml) coconut milk 

“Shortcake” Crumble

  • ¼ cup (60 ml) flaked coconut
  • ¼ cup (60 ml) hemp hearts
  • ¼ cup (60 ml) rolled oats or crushed graham crackers
  • 1 Tbsp (15 ml) coconut oil, melted 
  • Dash cinnamon

Directions: 

  1. Add all smoothie ingredients to the blender and blend until smooth.
  2. In a small bowl, mix shortcake crumble ingredients.
  3. Layer smoothie and shortcake crumble together in freezer pop molds. Freeze for 4 hours and enjoy within 2 weeks.

Recipe tips:

  • Allow bananas to become overripe before freezing. This will enhance the natural sweetness and make them perfect for smoothies and baking. 
  • Since my Esme is still under a year old, I replace the honey with maple syrup or a pitted Medjool date.
